    Ingredients: yields 36 slices
    1/2 cup raw almonds, soaked
    2 cups almond pulp
    1/2 cup ground flax seeds
    1 cup veggie pulp (5 carrots, 1 stalk of broccoli)
    1 tsp garlic powder
    1 tsp sea salt
    1/2 – 1 cup carrot juice
    Preparation:
    After soaking, drain and rinse the almonds. Place the almonds in a food process, fitted with the “S” blade and process to small coarse pieces.
    Add the almond pulp, flax, veggie pulp, garlic and salt. Process until just combined then add the carrot juice. Start with 1/2 cup and increase if more moisture is needed. The batter should resemble the consistency of bread dough. You’ll want it dry enough to shape into a log (not soupy or runny at all) but wet enough to stick together.
    Have 1-2 dehydrator trays ready lined with the mesh sheet.
    Now that your dough is ready, shape it into a log. Make your log 3” wide and 2” high. It is best to make your log on a cutting board. Just turn out the dough onto your cutting board to begin to shape using the palms of your hands until you have a log in the shape you desire. Now make slices in the log about a 1/2” wide. Place the slices onto the trays.
    Dehydrate at 145 degrees (F) for 1 hour (explained here), and then reduce to 115 degrees (F) until crisp and no moisture remains.
    Store in an airtight container for 1-2 weeks.

    “I Am Happy” Cafe Gratitude2 1/2 cups soaked almonds
    1/4 cup + 2 tablespoons raw tahini
    3/4 tspn freshly ground black pepper
    1/2 tspn cumin powder
    1/4 cup + 2 tablespoons olive oil
    1/4 cup + 2 tablespoons lemon juice
    1/2 cup almond milk
    3/4 tspn salt
    In a food processor, process the almond pulp and the remaining ingredients, minus half the almond milk. Begin again to puree the ingredients, adding the almond milk until you reach a creamy texture (or one that you desire).
    Taste the hummus and adjust any ingredients to your liking – lemon juice, cumin, olive oil.
    This can be served drizzled with olive oil and dusted with cumin and/or paprika.

    This sauce is something I've been wanting to tackle for a while -- although I have a very outdated marinara recipe somewhere hidden in the AtV archives, it was definitely time to reassess and make it better.Mister AtV eats a lot of spaghetti (the non raw kind), and when we have our meals together I sometimes will make a raw food version of whatever cooked food he's eating. Now I can enjoy a marinara that (in my opinion) tastes just as good as what's on his plate!
    Growing up I have fond memories of my Mom making an amazing spaghetti sauce from scratch, so I had to draw on those flavors in making my own; rich, tangy, sweet, and a hearty balance of Italian herbs. Needless to say I think my Mom would be proud, and when she comes up for a visit this summer I'll be testing it out on her!
